My Favorite Recipes About a year ago I became a vegetarian, and since then I've been slowly acquiring quick and easy vegetarian meals. Here are my favorites so far. If you know of any other simple, tasty vegetarian recipes (especially vegan recipes), I'd appreciate it if you'd pass them on to me at yarringt@asel.udel.edu

Soups

• Hot and Sour Soup - I really like this, but it's more of an appetizer than a meal-type soup.

• Creamy Potato and Spinach Soup - This is a thick, filling winter soup.

Dips

• Southwest Kidney Bean Dip - Easy! Vary it however you want to.

Main Dishes

• Chinese-Style Vegetables with Couscous - Really good, but you may want to double the amount of sauce.

• Tunisian Vegetable Stew - One of my all-time favorites!

• Black-eyed Peas and Spinach - Quick and delicious, expecially with grits and cheese or orzo and parmesian cheese.

• Tofu Stroganoff - This is an good recipe to serve to guests who think they don't like tofu.

• Orzo with Feta Cheese - Quick, easy, and good but mild.

• Skillet Eggplant Parmesian - Always a favorite, even before I was a vegetarian. Be careful not to make it too salty!

Desserts

• Chocolate Chip Sour Cream Cake - Easy and delicious.

  Walnut Crescents - A lot of work, but worth it!

  Jewish Apple Cake

  Scotch Shortbread - The honest to goodness Scottish recipe!
